Preheat oven to 375.
1 C. unsalted sweet cream butter, room temperature
3 C. granulated sugar
3 C. shredded zucchini
5 C. flour
2 tea baking powder
2 tea baking soda
1 tea salt
2 tea vanilla
2 tea nutmeg
2 tea cinnamon
2 C. semi sweet chocolate chips
- Cream together butter, sugar, and eggs til smooth.
- Add remaining ingredients (except choc. chips). Beat well.
- Gently stir in chocolate chips.
- Bake on greased cookie sheet at 375 for 10 min.
These freeze fantastically! Throw some in a freezer bag and enjoy them for months to come.
